vegetable broth

sesame oil

rice wine vinegar

peeled and fresh grated ginger root

Tbsp.
sambal olek or chili sauce

Tbsp.
light soy sauce

Tbsp.
lime juice

each
cubannelle, red bell, banana peppers
seeded, cubed or sliced into matchsticks

carrot
peeled and thinly cut into matchsticks
1/2
onion
thinly sliced
2
cups
chow mein, udon or spaghetti noodles
Toppings
peanuts or cashews
crunchy Chinese Noodles or Wonton Strips
green onions, sliced
mango slices
Instructions
Prepare noodles according to package. Drain well and set aside.
Combine all ingredients, except veggies in a medium bowl and stir together.
Stir fry peppers and onion until translucent.
Add carrots and sauce. Cook and stir until heated through.
Ladle into serving dishes.
Top with desired toppings
Serve and enjoy with suggested wine.
