Firecracker Noodles

Ingredients
  

  • 1/4 cup vegetable broth
  • 1/4 cup sesame oil
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. peeled and fresh grated ginger root
  • 1 Tbsp. sambal olek or chili sauce
  • 1 Tbsp. light soy sauce
  • 1 Tbsp. lime juice
  • 1 each cubannelle, red bell, banana peppers seeded, cubed or sliced into matchsticks
  • 1 carrot peeled and thinly cut into matchsticks
  • 1/2 onion thinly sliced
  • 2 cups chow mein, udon or spaghetti noodles

Toppings

  • peanuts or cashews
  • crunchy Chinese Noodles or Wonton Strips
  • green onions, sliced
  • mango slices

Instructions
 

  • Prepare noodles according to package. Drain well and set aside.
  • Combine all ingredients, except veggies in a medium bowl and stir together.
  • Stir fry peppers and onion until translucent.
  • Add carrots and sauce. Cook and stir until heated through.
  • Ladle into serving dishes.
  • Top with desired toppings
  • Serve and enjoy with suggested wine.
